Raspberry Tiramisu

- 12 oz. frozen raspberries,thawed shopping list
- 1/4 c sugar shopping list
- 2 oz.(2" thick slice pound cake shopping list
- 1/4 c marscapone or cream cheese shopping list
- 1/4 tsp vanilla shopping list
- 1/2 c heavy cream,lightly whipped shopping list
- 1/2 pt. fresh raspberries shopping list
How to make it
- Puree frozen raspberries with half the sugar.
- Slice the cake and cut it into 1/2" cubes. Divide among 4 lowball,wine or martini glasses or toss into small bowls. To with equal amounts of puree.
- Gently blend the marscapone with the vanilla and remaining sugar. Fold in the whipped cream and put a scoop of this mixture into each glass. Finish with fresh berries and serve immediately or chill for up to 4 hours.
