CHICKEN SKILLET COBBLER

- 1 pound boneless, skinless chicken breasts, cut into bite-size pieces shopping list
- 2 (12-ounce) jars chicken gravy shopping list
- 1 tbsp chopped garlic shopping list
- 1 (16-ounce) package frozen mixed vegetables shopping list
- 1 tsp poultry seasoning shopping list
- 1 medium onion, chopped shopping list
- 1 1/2 cups pancake mix shopping list
- 3/4 cup chicken or beef broth shopping list
How to make it
- Spray a 12-inch nonstick skillet cooking spray.
- Sauté the chicken over high heat until cooked through.
- Add the gravy, garlic, vegetables, poultry seasoning and onion, stirring until well mixed.
- Bring the chicken mixture to a boil and cook for 2 minutes.
- Combine the pancake mix and broth in a bowl, stirring to make a thick batter.
- Spread the batter over the boiling gravy. (The batter will spread to cover the gravy as it cooks.)
- Reduce the heat to a low boil.
- Cover the skillet and cook for 5 to 7 minutes or until the batter is fully cooked.
