How to make it

  • Brown crumbled sausage in a saucepan.If you are using a jalapeno add it now. If you are worried about the fat, put the sausage in a strainer and rinse with hot water to get excess fat off.
  • Put into a bowl and add the cheese of your choice, preferably pepperjack or monterry jack
  • Stir to melt chese into sausage.
  • When cool enough to handle, shape into small balls and set aside.
  • Tear the biscuits apart to make two.
  • Stretch biscuit and place sausage ball on it, then pinch edges of biscuit so that sausage is covered completely.
  • Place on parchment or spray baking sheet with cooking spray.
  • Bake according to biscuit directions, usually about 25 minutes.
  • These are so good - you will wish you had made a double batch. They can be served with sour cream mixed with taco seasoning to cool off the heat, just mix it up before baking the rolls so the flavors can blend.

    Well, I made them the night before and the biscuits fell flat so - so much for my recipe that I bragged on! Don't give up on me! They have never failed me before!

    I made these a few years ago and my step daughter who owns a restaurant in Arkansas adapted this recipe to suit her early prep and sells them for $1.25 each and also distributes them to other stores in her area! So - why didn't I patent this!!! The trick is to let the sausage cool after melting the cheese into it before shaping into balls and just stretching the biscuit to cover it - not too much dough!

    I did make these and they are very good. I added some ranch dressing to the 2nd batch for a little twist. There were no leftovers!
