How to make it

  • In a heavy large saucepan, combine the egg yolks, milk, 1/3c. sugar, and espresso powder. Cook and stir over medium heat until mixture just coats a metal spoon. Remove from heat.
  • Cool quickly by placing saucepan in a bowl of ice water and stirring for 2 minutes. Stir in the 1/4c. rum and vanilla. Cover with plastic wrap. Chill 4 hours.
  • To serve: in a chilled mixing bowl, combine heavy cream and 2tbs. sugar; beat with the chilled beaters and beat with mixer on medium speed until peaks form.
  • Transfer chilled egg mixture to a punch bowl. Fold in whipped cream mixture. Or serve in individual beverage glasses. Garnish as desired.
