Cajun Fried Chicken

- 4 to 5 lbs chicken parts, cut up, excess fat removed, average size pieces do not use very large or heavy peices to insure proper frying shopping list
- 1 large bottle of favorite Italian salad dressing ( could be red wine, cheese flavored, garlic etc ) shopping list
- 1 Tbs cajun spice blend or as desired shopping list
- 1 Tbs salt or as desired shopping list
- 1 tsp fresh ground black pepper or as desired shopping list
- flour, about 3 cups shopping list
- yellow cornmeal, about 1 cup shopping list
- 4 eggs fork beaten shopping list
- 1/4 cup liquid ( water, plain milk, or chicken broth )I used water shopping list
- Louisiana or other hot sauce, 1 Tbs or as desired shopping list
- canola oil , peanut oil or Crisco type vegetable shortening shopping list
- Extra coarse salt and cracked pepper if desired shopping list
How to make it
- Place chicken parts in a ziplock bag and add bottled dressing and let chicken marinade overnight or at least 4 hours
- When ready to use, drain chicken, pat dry, let warm up to room temp for best frying
- Place flour , cornemeal and dry spices and dry seasonings in bowl
- In another bowl beat eggs, liquid of choice and hot sauce
- Meanwhole place oi or shortening in a real heavy dutty skillet or electric fy pan ( which I used ) and heat about inch or more of oil to 375F.
- Oil should appear wavy and a drop of water will immediately sizzle in oil
- Using one hand, dip chicken in seasoned flour, then in egg and again in flour
- Do this with all pieces and place in a single layer on plate to air dry while you repeat with all chicken pieces
- Then add chciken carefully into hot oil, several peices ( do not overcrowd in pan or oil temp will drop ) and heat golden brown on each side.
- Turn each piece carefully with tongs and cook till done, about 1/2 hour total
- Drain on paper toweling
- If desired sprinkle hot chicken with cracked pepper, salt, etc for added flavor and spiceness
- Chicken pieces can be placed in a 200F oven to keep warm
- I have a professional table top food heating lamp to keep the chicken warm.
- Nice to have for family gatherings, buffets but warm oven will suffice
- Enjoy!
