Christmas Cream Corn

- 2 (1 lb) bags of frozen corn, thawed shopping list
- 1 TB olive oil shopping list
- 6 strips thick-cut bacon; cut into small pieces shopping list
- 1/2 cup diced yellow onion shopping list
- 1 TB minced garlic shopping list
- 1/2 cup chicken broth shopping list
- 1-1/2 cups heavy whipping cream shopping list
- 4 TB butter shopping list
How to make it
- In a large skillet on medium-high heat, saute bacon pieces in olive oil until browned. Add onion and garlic and cook util soft, about 2 minutes. Add corn and saute about 5 minutes. Add chicken broth and heavy cream. Bring just to a boil, then turn the heat down to med-low and simmer until thickened, about 15-20 minutes. Add butter and stir until melted. Sprinkle with salt and pepper to taste.
