Turnip and Paprika Soup

- 1 1/2 lb. of peeled 1 in cubed turnip bulbs(not the leafy tops) shopping list
- 1 large cut into chunks onion shopping list
- 3 c. of chicken broth, homemade or from a carton or can shopping list
- 1 1/2 c. of half-and-half (or whole milk) shopping list
- 1 tbsp. of butter shopping list
- 1 pinch of sugar shopping list
- 3 large sliced garlic cloves shopping list
- 2 tsp. of paprika shopping list
- 1 tsp. of dried thyme leaves shopping list
- 1/8 tsp. of cayenne pepper shopping list
- salt and freshly ground pepper, to taste shopping list
- crisp shallot shopping list
How to make it
- First you want to add some olive oil to a pan over medium flame.
- Saute the turnips and onions, letting veggies turn golden approx. 8 min.
- Turn flame to low and add in the butter, garlic, and sugar.
- You will want to cook this until all veggies are caramel color approx. 10 min.
- Then you can add in the paprika, thyme, and hot pepper, approx. 1 min.
- Now you can pour in the broth, letting this cook over low flame unitl turnips are tender appox. 10 min.
- Now puree the turnips until smooth approx 1 min.
- Return pureed turnip mixture back into the pot and add some hal-and-half to make creamy.
- Add in some salt and pepper.
- Enjoy!
