This veggie soup will be a favorite! Add some crusty bread to this!

Ingredients
  • 1 1/2 lb. of peeled 1 in cubed turnip bulbs(not the leafy tops)
  • 1 large cut into chunks onion
  • 3 c. of chicken broth, homemade or from a carton or can
  • 1 1/2 c. of half-and-half (or whole milk)
  • 1 tbsp. of butter
  • 1 pinch of sugar
  • 3 large sliced garlic cloves
  • 2 tsp. of paprika
  • 1 tsp. of dried thyme leaves
  • 1/8 tsp. of cayenne pepper
  • Salt and freshly ground pepper, to taste
  • crisp shallot

Directions
  1. First you want to add some olive oil to a pan over medium flame.
  2. Saute the turnips and onions, letting veggies turn golden approx. 8 min.
  3. Turn flame to low and add in the butter, garlic, and sugar.
  4. You will want to cook this until all veggies are caramel color approx. 10 min.
  5. Then you can add in the paprika, thyme, and hot pepper, approx. 1 min.
  6. Now you can pour in the broth, letting this cook over low flame unitl turnips are tender appox. 10 min.
  7. Now puree the turnips until smooth approx 1 min.
  8. Return pureed turnip mixture back into the pot and add some hal-and-half to make creamy.
  9. Add in some salt and pepper.
  10. Enjoy!
