Bun Bi Chay Recipe
More guidelines than a recipe, this is a flexible, popular Vietnamese dish perfect for warm weather. "Bun" are the traditional rice noodles eaten for many meals in Vietnam. "Chay" means vegetarian, but you can easily substitute a meat analog.

Ingredients
  • 12 ounces dried rice noodles (vermicelli)
  • 1 package frozen whole vegetarian mock smoked duck
  • 1/2 lb asparagus
  • 1/2 cup shredded or julienned carrots
  • 1/3 cup each of fresh cilantro, basil, and mint
  • 1 cup bean sprouts
  • fried garlic and/or onion chips, for garnish as desired
  • 1/4 cup naam pla chay (vegetarian fish sauce, or soy sauce)
  • 1/4 cup rice vinegar
  • 1 TBSP palm sugar dissolved in 1/4 cup water
  • 3 crushed Thai or birds eye chilis
  • 1 large or 2 small pressed garlic cloves

Directions
  1. Preheat grill to about 500 F. Set large pot of water to boil.
  2. Toss asparagus in 1 tsp oil, sprinkle with a pinch of salt & pepper.
  3. Put asparagus and whole duck on the grill. Leave for 5-8 minutes until grill marks appear on one side of the duck. Remove asparagus and flip duck to grill for 5 minutes on the other side.
  4. Cook rice noodles according to package directions.
  5. Chop carrots and herbs.
  6. Cut grilled duck into thin strips, ie shred it.
  7. Layer noodle, duck and asparagus, carrots, herbs, sprouts on plates. Pour sauce over each plate just before serving, and allow each person to sprinkle additional herbs, fried garlic or onion, and chopped peanuts for garnish to their taste.

This sounds so flavorful - would I find vegetarian mock smoked duck at an Asian grocer, or a health store? I'm not familiar with that, but would love to try it - thank you! Vietnamese food is one of my fave cuisines...


Try an Asian grocery store. They often have a whole fake meat section next to frozen fish in particular and frozen meat in general. You could also press (to drain) and freeze tofu for this recipe. Once it's thawed out, it's much more porous and lighter.

Yumm!!!! This looks like a great dish to make for dinner! I'm gonna try this very soon. I would make it with bread, maybe sourdough or pita.
