Mushroom - Almond Pilaf Recipe
This creamy pilaf is a particularly wonderful side dish for pork or chicken. It can be doubled easily to feed a big crowd or make lots of delicious leftovers.

Ingredients
  • 1/4 cup butter
  • 1/2 cup uncooked long-grain rice
  • 1/4 cup uncooked orzo pasta
  • 1 package fresh mushrooms, sliced
  • 1 medium onion, diced
  • 2 cups chicken broth
  • 1/2 cup chopped almonds

Directions
  1. Place a large skillet over medium-low heat. Melt butter, then saute rice, orzo, mushrooms and onion.
  2. Stir constantly until rice is lightly browned.
  3. Mix in chicken broth and almonds. Bring to a boil, then reduce heat to low, cover skillet, and allow to simmer 15 minutes.
  4. Remove from heat and let stand 10 minutes before serving.

That does sound yummy, Mich - you might want to change the ingredient hazelnut to almonds?!? I will definitely try this. Did you add some seasoning??? I'm so full of questions tonight...

Oops, thanks for that catch! The original recipe called for hazelnuts, but my friend made it with almonds.

The original recipe calls for thyme, marjoram, and pepper, but again, my friend made it without...and it was surprisingly good! The simple flavor of the butter and almonds and mushrooms and onions really shine. I'm sure you could season it, but this dish actually stands really well on its own.


Well it certainly sounds good. I haven't tried using hazelnuts in rice but hey, why not? Thanks!
