How to make it

  • Cut the cheese in 1/4-inch slices, then cut the slices in two to make squares.
  • Drain the jalapenos.
  • Put a jalapeno slice on each piece of cheese, use toothpicks to hold them together and to use as a handle for the breading.
  • Combine the eggs with an equal amount of water or beer, blend well.
  • Dip a cheese/pepper in the egg wash (I use a small juice glass for this).
  • Toss in bread crumbs to coat, set to the side, repeat for each cheese/pepper slice.
  • Repeat two or three times for each slice, finish with a dip in the egg wash.; let stand about 10 minutes on a piece of waxed paper.
  • Deep fry about two minutes at 325 to 350 degrees, until nicely browned.
  • Drain on newspaper.
  • Serve hot.
  • I really like Cabot Seriously Sharp Cheddar for this, but any sharp cheese will do. American cheese does all right in a pinch. I do not recommend mozzarella as it get overwhelmed by the jalapeno. I have not tried cream cheese for this, but it is probably too soft to work.
