Chicken with Sundried Tomato Cream

- 2 lbs of chicken cut into 1 inch cubes shopping list
- 1 bunch of Asparagas, cleaned and cut into 1 inch pieces shopping list
- 1 bunch of chives, chopped shopping list
- 4 cloves of garlic shopping list
- 1 jar of Sundried tomato, 7oz shopping list
- 1 pint of heavy cream shopping list
- 1 lb of Wheat penne pasta shopping list
- 3T olive oil shopping list
- salt shopping list
- pepper shopping list
- basil (dried or fresh) shopping list
How to make it
- Lightly salt and pepper the chicken
- Add the olive oil to a saute pan and heat to med high
- Add chicken and cook through, tossing occationally
- While Chicken is cooking start boiling the pasta
- After chicken is cooked through remove from the pan with a slotted spoon and keep it warm
- Now add garlic, cream, asparagas and sundried tomatoes to the pan and heat until the sauce begins to bubble. You should see it begin to thicken. If it is too thick add a little milk and if not thick enough add a pinch of flour.
- Once the sauce has thickened to your liking add the chicken to the sauce and also add the chives. Allow all the ingredients to simmer together for a few minutes.
- Once the pasta is finished cooking, drain and put it back into the pot. Then add the sauce to the cooked pasta and mix together.
- Salt and pepper if necessary.
- When you plate put a pinch of chopped basil on top and serve with garlic bread! YUM
