How to make it

  • Soak wheat overnight.
  • Make a dough from the glutinous rice flour with a little water and salt , knead until it loses it's stickiness
  • Divide dough into 2 and add food colouring
  • Rinse and strain the wheat .
  • Boil wheat in 2 liters of water with the screw-pine leaves (do not forget to tie a knot in the screw-pine to make it fit the pot more easily).
  • Boil wheat for about an hour or until soft, the wheat should split open when done.
  • While waiting for wheat to cook, prepare guli-guli. boil 2 liters of water in another pot..
  • For the filling, mix the nuts with the sugar in a food processor, (not too fine or mixture will become oily)
  • Roll the coloured dough into small marble-sized balls
  • Poke a hole in the dough balls, fill with filling, then pinch it closed. Roll back into a ball.
  • Put the guli-guli into the boiling water, they will float when cooked, then strain to one side.
  • When the wheat is just boiled, add sugar. Let it boil, add coconut milk, then let boil again.
  • When the wheat and coconut milk is boiling again, add the guli-guli, making sure you stir them around to prevent them from sticking together.
