Fennel and Olive Salad

- 4 baby fennel bulbs quartered shopping list
- 2 red onions cut into eight pieces shopping list
- 4 plum tomatoes halved shopping list
- 3 tablespoons olive oil shopping list
- 2 tablespoons oregano leaves shopping list
- salad greens shopping list
- 1 cup small olives shopping list
- 3 tablespoons apple cider vinegar shopping list
- 2 teaspoons Dijon mustard shopping list
- 2 tablespoons olive oil shopping list
- 1 garlic clove crushed shopping list
How to make it
- Preheat oven to 400
- Place fennel, onions and tomatoes in a baking dish
- Heat oil in a small saucepan over low heat
- Add oregano to pan and heat for 3 minutes
- Pour oil over vegetables and bake for 30 minutes
- To make dressing whisk together vinegar, mustard, oil and garlic
- Place vegetables on bed of salad greens on serving plates then sprinkle with olives and dressing
