Gluten Free Almond And Orange Cake

- 6 eggs (separated) shopping list
- 1 cup castor sugar shopping list
- grated rind and juice of 1 orange shopping list
- 1 3/4 cups almond meal shopping list
- 1/2 tsp almond essence (optional) shopping list
How to make it
- Grease a 20cm cake pan and line the bottom with baking paper.
- Preheat the oven to 160 degrees Celsius.
- In a large mixing bowl, beat together the egg yolks, sugar and rind. Add the almond meal, juice and almond essence (if using).
- Beat the egg whites in a separate bowl, until stiff.
- Gently fold the whites with the almond mixture.
- Pour mixture into cake tin and place in the oven.
- Bake for about 55 mins, until the top has browned and a cake tester comes out clean.
- Cool on a cake rack.
- If desired, dust with icing sugar before serving. Serve with cream or yogurt, or just by itself!
