How to make it

  • Grease a 20cm cake pan and line the bottom with baking paper.
  • Preheat the oven to 160 degrees Celsius.
  • In a large mixing bowl, beat together the egg yolks, sugar and rind. Add the almond meal, juice and almond essence (if using).
  • Beat the egg whites in a separate bowl, until stiff.
  • Gently fold the whites with the almond mixture.
  • Pour mixture into cake tin and place in the oven.
  • Bake for about 55 mins, until the top has browned and a cake tester comes out clean.
  • Cool on a cake rack.
  • If desired, dust with icing sugar before serving. Serve with cream or yogurt, or just by itself!
