How to make it

  • In a large bowl mix together prepared rice, drained shrimp, diced cauliflower and diced green pepper.
  • Then in a separate bowl blend together mayonnaise, French dressing, chopped onion, lemon juice, and seasonings.
  • Add this to the rice mixture and chill for an hour or over night.
  • Serve about ½ to ¾ cups scoops on a lettuce leaf.
  • I like color, so I would add a tomato wedge to the side.
