Guacamole Bread

- 2 tbs chopped onion shopping list
- 1 tbs butter shopping list
- 2 cups flour shopping list
- 1 1/2 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp ground cumin shopping list
- 1/2 cup butter, softened shopping list
- 1 cup sugar shopping list
- 1 cup mashed avocado shopping list
- 2 eggs, beaten shopping list
- 3 green New Mexican chiles, roasted peeled, stems and seeds removed, chopped shopping list
How to make it
- Saute the onion in the tbs of butter until softened.
- Sift together all the dry ingredients.
- Cream together the softened butter and sugar. Add the avocado, eggs, onion and chiles.
- Add the dry ingredients to the avocado mixture and mix well. Pour the batter into a buttered 9x5 loaf pan and bake for 15 minutes at 375 degrees. Reduce heat to 350 degrees and continue to cook for 55 minutes or until done.

This sounds fantastic!! I'll probably leave out the chiles as i'm a bit of a spice-wimp, but I can't wait to make this!! (sounds just perfect with a bowl of hot soup). Thanks so much for sharing :)
