How to make it

  • Cook bacon in a large, deep skillet until browned.
  • Add onion, green bell pepper and garlic.
  • Saute until onion is tender, about 5 minutes.
  • Add black eyed peas, water, salt, bay leaf and hot pepper sauce.
  • Cover and simmer 30 minutes.
  • Meanwhile, prepare rice according to package directions.
  • Remove bay leaf from beans.
  • Add cooked rice.
  • Continue simmering for about 10 minutes or until all the liquid is absorbed.
  • Serve hot.

    I have a very similar recipe that I got off the back of a pkg of frozen blackeyed peas. It's very good!
