Hoppin John Recipe
This is a New Year's tradition in the South. Black eyed peas are supposed to symbolize good luck for the coming year. A really good side for the rest of the year as well! Found this on the Lean Cuisine website.

Ingredients
  • 4 strips bacon, chopped
  • 1 cup onion peeled & chopped
  • 1/2 cup seeded green bell pepper, chopped
  • 1 clove garlic, crushed
  • 1 can (15 oz.) black eyed peas, drained
  • 1/2 cup water
  • 1 tsp salt
  • 1 bay leaf
  • 1/8 tsp hot pepper sauce
  • 1 1/2 cups long-grained rice

Directions
  1. Cook bacon in a large, deep skillet until browned.
  2. Add onion, green bell pepper and garlic.
  3. Saute until onion is tender, about 5 minutes.
  4. Add black eyed peas, water, salt, bay leaf and hot pepper sauce.
  5. Cover and simmer 30 minutes.
  6. Meanwhile, prepare rice according to package directions.
  7. Remove bay leaf from beans.
  8. Add cooked rice.
  9. Continue simmering for about 10 minutes or until all the liquid is absorbed.
  10. Serve hot.

I have a very similar recipe that I got off the back of a pkg of frozen blackeyed peas. It's very good!
