How to make it

  • Fry up the bacon until browned.
  • Meanwhile, pour 1/2 cup apple cider vinegar into medium-sized bowl.
  • Halve the grape, dice the apple, and chop the celery.
  • Put the above vegetables/fruits into the bowl of vinegar: swirl around so that all the surfaces get covered.
  • Mix the watercress and spinach in a large salad bowl.
  • Add the grapes, apple, and celery, being careful to siphon off the unused vinegar.
  • Crumble the bacon on top.
  • Add the 1 cup shredded cheeses.
  • Whisk together the remaining 1tb apple cider vinegar and the 2tb olive oil. Add pepper and salt to taste (I recommend using a pepper grinder).
  • Toss the salad with the dressing.
  • Serve.
