Panch Phoran5 spice Bengan Eggplant

- Panch Phoran(5 spice) Bengan (Eggplant) shopping list
- 1/4 tsp fennel seed shopping list
- 1/2 tsp yellow mustard shopping list
- 1/4 tsp onion seed/nigella seed shopping list
- 1/4 tsp fenugreek seed shopping list
- 1/4 tsp cumin seed shopping list
- mix the above and take 1 tbsp of the same shopping list
- or shopping list
- 1 tbsp of Panch Phoran shopping list
- 6 medium Indian eggplant - cut into 6 lengthwise pcs. If eggplant is very small into 4 lengthwise pcs. shopping list
- Masala: shopping list
- 1 tsp chilli powder shopping list
- 1/4 tsp turmeric powder shopping list
- 1 tsp salt shopping list
- 1 tomato chopped shopping list
- 1 medium onion sliced shopping list
- 2 garlic cloves chopped shopping list
- 2 tbsp corainder leaf shopping list
- oil - 2 tbsp shopping list
How to make it
- Take oil in a pan. Once it is hot add the panch phoran and let it crackle. Add the onion and garlic and saute till the onion turns translucent. Don’t let it brown. Add the eggplant and all the masala. Cover and cook till the eggplant is done. Add the chopped tomato and cover and cook till the tomato is also cooked. Garnish with coriander leaves and serve with phulkas.
