How to make it

  • Take oil in a pan. Once it is hot add the panch phoran and let it crackle. Add the onion and garlic and saute till the onion turns translucent. Don’t let it brown. Add the eggplant and all the masala. Cover and cook till the eggplant is done. Add the chopped tomato and cover and cook till the tomato is also cooked. Garnish with coriander leaves and serve with phulkas.
