Vegetable Biryani

- basmati rice 2 cups, soaked in water for 30 mins shopping list
- Brown cardamon 2 shopping list
- Bay Leaf 4 shopping list
- cloves 6 shopping list
- black pepper 6 shopping list
- lemon juice 1 tbsp shopping list
- oil 1 tbsp shopping list
- Other ingredients shopping list
- onion 2 large sliced shopping list
- carrots 2 cubed shopping list
- pea ½ cup shopping list
- tomatoes 2 medium chopped shopping list
- beans 1/2 cup shopping list
- green pepper 1 deseeded and diced shopping list
- red pepper 1 deseeded and diced shopping list
- garlic 2 tbsp chopped shopping list
- ginger 2 tbsp chopped shopping list
- mint leaves 3 tbsp chopped shopping list
- coriander leaves 2 tbsp chopped shopping list
- turmeric powder ½ tsp shopping list
- Red chilli powder 1 tsp shopping list
- cumin seed 1 tsp shopping list
- oil 5 tbsp shopping list
- salt to taste shopping list
How to make it
- METHOD
- 1. Boil the rice alongwith with its ingredients till fully cooked. Rice should be firm. Discard the bay leaf and the cardamon.
- 2. Add the balance oil (keep two tbsp in reserve) in pan. Add cumin and when they start to splutter add the onions and saute till transparent. Add the carrot,pepper and beans and cook till done.
- 3. In a separate pan, heat 2 tbsp of oil. Add garlic and ginger, saute for a minute. Add tomatoes and saute for 3-4 min on low heat.
- 4. Now mix in the tomatoes, peas turmeric, chilli and salt to the vegetables, add coriander and mint leaves. let it cook for 2 mins. Mixin the rice and the vegetables.
- 5. Close with a tight fitting lid and seal. Keep on low heat for 5-6 mins, preferably on a griddle.
