How to make it

  • Cook the couscous:
  • Follow the cooking instruction on the packet
  • or
  • Boil 4 cup of water and add a pinch of salt and 1/2 tsp of olive oil. When the water starts boiling, turn off the gas and immediately add the couscous. Cover and let it stand. After sometimes fluff it up with a fork. Keep aside.
  • Take oil in a pan.
  • Once oil heats add the mustard and let it splutter. Then add the curry leaf.
  • Next add the ginger; green chilli and onion. Cook for 3-4 mins till onion turn translucent. Don't let the onion brown. Then add the potato; carrot; beans and mix everything together. Cover for 7 mins till vegetables are tender but not over cooked. Add the peas and tomatoes and salt. Cook for 5 more mins. Add the cooked couscous and mix everything together. Garnish with coriander leaves and lemon juice.
