Veggie Puffs

- 1 package (17.3 ounces) Pepperidge Farm puff pastry sheets, thawed shopping list
- onion - 1/2 chopped finely shopping list
- potatoes - 3 boiled and cut into tiny cubes shopping list
- carrot 1 cut into tiny cubes shopping list
- peas 1/4 cup shopping list
- salt to taste shopping list
- oil - 1 tbsp shopping list
- Chilli powder - 1 tsp (adjust according to taste) shopping list
- coriander - 1 tbsp shopping list
How to make it
- Take a pan. Add oil.
- Add chopped onion and saute till its translucent. Stir in the carrots and peas and cook for 2 mins. Add the potatoes along with salt; chilli powder and mix it together.
- Heat the oven to 400°F.
- Unfold the pastry sheets on a lightly floured surface.
- Cut each pastry sheet into 4 (about 5-inch) squares.
- Spoon about 1/4 cup vegetable mixture on the lower third of each pastry square.
- Fold 2 sides over the filling and roll up like a jelly roll.
- Place the filled pastries seam-side down onto a baking sheet.
- Bake for 20 minutes or until the pastries are golden brown.
