  • Method
  • combine the flour, baking powder and salt; add the coconut, sugar, vanilla and eggs and mix well;
  • gradually add the milk, mixing to form a firm but not sticky dough;
  • knead for a few minutes; form into 2 loaves and place into greased bread pans;
  • sprinkle the tops with a little sugar and
  • bake in a 180° F (350° F) oven for about 1 hour or until golden brown;
  • serve warm or cold.
