Indian Yellow Peas - Crockpot

- 1 cup yellow split peas shopping list
- 1 Tbsp cumin seeds shopping list
- 2 Tsp coriander seeds shopping list
- 2 Tbsp olive oil shopping list
- 2 onions, finely chopped shopping list
- 4 cloves garlic, minced shopping list
- 1 inch ginger, grated shopping list
- 2 cups vegetable stock shopping list
- 1 14 oz can diced tomatoes shopping list
- 1 Tbsp lemon juice shopping list
- 1 tsp cayenne pepper shopping list
- 1 tsp turmeric shopping list
- 1/4 cup cilantro shopping list
- 1/2 cup coconut milk (optional) shopping list
How to make it
- Toast seeds in hot dry skillet for 2 minutes. Grind
- Bring peas to boil in pot of water (3 mins), then soak for 1 hour. Rinse.
- Heat oil in skillet and gently saute onion, garlic and ginger for 3 minutes.
- Put all ingredients in slow cooker and cook for 4-5 hours high or 8-10 low.
- Stir in cilantro and coconut milk, if using.
