Egg Salad Pitas

- 5 hard-cooked eggs, peeled shopping list
- 1/2 cup cottage cheese, 1% M.F. if desire shopping list
- 1/4 cup chopped red pepper shopping list
- 1/4 cup chopped celery shopping list
- 2 tablespoons finely chopped green onion shopping list
- 1 tablespoon salad dressing shopping list
- 1 tablespoon sweet relish shopping list
- salt shopping list
- pepper shopping list
- 2 whole wheat pita breads shopping list
- Curly lettuce shopping list
How to make it
- In large bowl, using a pastry blender or a fork, coarsely chop or mash eggs. Stir in cottage cheese, red pepper, celery, green onions, salad dressing, and relish; mix well. Season with salt and pepper, to taste. Cut each pita bread in half and line each pocket with lettuce leaf. Fill with egg salad mixture, about 1/2 cup in each pocket
