Kung Pao Chicken

- 1 1/2 boneless and skinless chicken breasts shopping list
- 3 Tbsp of roasted peanuts shopping list
- 8-12 dried red chilies (but I used only 4 pcs) (remove the seeds and cut into halves) shopping list
- 3 Tbsp of cooking oil shopping list
- 5 slices of fresh ginger (peeled) shopping list
- 2 garlic cloves (sliced diagonally) shopping list
- 1 stalk scallion or onion leaves (chopped) shopping list
- For the marinade: shopping list
- 1 Tbsp of cornstarch shopping list
- 2 Tsp soy sauce shopping list
- 1 Tsp sesame seed oil shopping list
- 1 Tbsp shaoxing wine ( but I did not even used this!) (check my breaded pork recipe.I used the seasoning mixture there as a substitute) shopping list
- For the sauce: shopping list
- 1 1/2 Tbsp of light soy sauce shopping list
- 1 Tsp of dark soy sauce shopping list
- 1 Tsp sugar shopping list
- 1/4 Tsp of black vinegar shopping list
- 2 Tbsp of water shopping list
- 1 Tsp cornstarch shopping list
How to make it
- Cut the chicken meat into small cubes and marinate for at least 30 mins.
- Mix the sauce ingredients in a small bowl and set aside.
- Heat up a wok with 1 Tbsp of cooking oil and stir-fry the marinated chicken until they are about 70% cooked. Remove from the wok and set aside.
- In a frying pan, add in the remaining 2 Tbsp of cooking oil.
- When the pan starts to smoke, Add the garlic and ginger and so a quick stir then add the dried red chilies.
- Stir fry until the chilies smell spicy,then add the chicken.
- Add the roasted peanuts then stir evenly.
- Pour the sauce and stir continuously until all the chicken are well coated.
- Add in the scallions and sir evenly.
- If you think the sauce is not enough. Turn off the heat then make another sauce mixture. Turn on the heat again then pour the additional sauce mixture.If the taste is too salty for you, add some more sugar and water to expel the saltiness.(But for me,this mixture is perfect:p)
- Dish out and serve with hot rice.This goes best with garlic rice.
