- 4 dried red chilies (soaked in water) shopping list
- 2 fresh red chillies, seeded shopping list
- 3 shallots, peeled and sliced shopping list
- 1 teaspoon oil shopping list
- pinch of salt shopping list
- Grind everything together, stir-fry until aromatic. Set aside shopping list
- *****----- Sauce: -----***** shopping list
- 5 Tbsp soy sauce shopping list
- 1 ½ Tbsp dark soy sauce shopping list
- 1 Tbsp sugar shopping list
- ½ tsp fish sauce shopping list
- ½ tsp salt shopping list
- 2 dashes white pepper shopping list
- Mix all together and set aside shopping list

- 3 cloves garlic, chopped finely shopping list
- 8 prawns (submerge in ice water with 2 Tbsp sugar, this maked them crunchy and sweet) shopping list
- 2 chinese sausages, sliced diagonally shopping list
- 1 cup bean sprouts shopping list
- 100 grams flat rice noodles, cooked, drained shopping list
- 1 egg shopping list
- leaves from 3 spring onions, chopped into thin 3cm strips (or a small bunch chinese chives, chopped) shopping list
How to make it
- Heat wok/frypan and add 2 Tbsp oil. Add the garlic and do a quick stir.
- Add prawns and sausage. Stir until prawn starts to change colour and you can smell the sausage.
- Add bean sprouts followed immediately by noodles. Add 3 Tbsp of the sauce and stir vigorously to blend well.
- Push noodles to one side and crack the egg on the empty area. Break the yolk and blend with the white. Cover egg with noodles.
- Add about ½ Tbsp of the chili paste and stir fry until egg is cooked. Add the onion leaves, stir then serve immediately.
