How to make it

  • Combine flour, sugar, baking powder and salt. Beat milk with egg and peanut butter until smooth. Add to dry ingredients and beat just until well moistened. Lightly butter hot griddle. Spoon by ¼ cupfuls onto griddle. Cook until golden brown on both sides.

    My husband is the peanut butter lover around here, but we both thought these were very good and the peanut butter flavor was spot on. The only reason I'm not rating the recipe five stars is because there is a direction missing and the number of servings is way off. Nowhere in the directions does it tell you when to add the melted butter. Perhaps the recipe submitter can edit the directions to include adding the butter to the wet ingredients, then mixing them together with the dry. I didn't measure out the batter when making the pancakes, but even so, there is no way I would have gotten 24 from the amounts listed. As it turned out, I got ten 4-inch pancakes. Using one bowl for the dry ingredients and one for the wet, then whisking everything together made these a snap to throw together and I will make them again when we want something a little different from our usual buttermilk pancakes.
