Peanut Butter Pancakes

    From Aussie-meat-pie: Peanut Butter Pancakes

    I was really surprised at how much I liked these since I'm not a peanut butter lover. I used creamy peanut butter, but can also see using crunchy if you want to add some texture. My husband has already suggested making them again and adding mini chocolate chips!

    Looking at the recipe, I would assume the butter might be for oiling the pan? Good catch, I'm sometimes guilty of not reading the directions through...;)

    Cosmicmom, at first I thought the same thing, but then realized that's a lot of butter just for greasing the pan, and added it to the batter. If I was a novice cook, I would have been totally lost! I think the chocolate/peanut butter combo would be super yummy!

    I don't even like peanut butter and jelly sandwiches! Sometimes I'll smear a very small amount of peanut butter on apple wedges just to get myself to eat an apple. I'm not an apple fan, either :p I've seen almond and cashew butters in the store, but they are super expensive for a small jar!

    When I was much younger and could burn calories a lot better than I do now, I used to have a peanut butter and jelly sandwich every day for breakfast. :) Now - I can't keep peanut butter in the house or I will eat the whole jar with a spoon.

    I buy almond butter online in bulk off amazon Bakerme. The brand I like is Zinke Orchards and I buy it in 12 packs and it ends up being about $7 for a 16oz. jar. Not too bad IMI and I love the stuff, goes great in smoothies :)

    Lol FA, Bri would eat them for breakfast too if I let her!

    Frankie, my husband does the same thing with the jar of peanut butter and a spoon! He doesn't eat the whole jar at once, but he has been known to eat a good portion of it at one time!
