Mexican Potato Skins

- 6 medium russet potatoes|russet potatoes shopping list
- ½ lb. ground beef shopping list
- 4 oz. taco sauce shopping list
- 4 oz. cheddar cheese shopping list
- diced jalapeno peppers shopping list
- 4 oz. sour cream shopping list
How to make it
- Bake potatoes.russet potatoes
- Cool and quarter. Scoop out potato and place skin side down on a non-stick pan.
- Brown ground beef until brown, mix in 4 oz. of taco sauce.
- Scoop seasoned beef onto each potato skin.
- Grate Cheddar cheese, sprinkle onto skins.
- Bake at 350°F for 15 minutes or until doneness
- Garnish with sour cream and jalapeno
