Smoked Rabbit And Chicken Gumbo

- 2-3 lb smoked rabbit, cut into 10 pieces shopping list
- 3 lbs. skinless, boneless chicken thighs shopping list
- 1 lg onion, chopped shopping list
- 1 bell pepper, chopped shopping list
- 1 jar of dry roux shopping list
- 6 qts of water shopping list
- salt, pepper & creole seasoning to taste shopping list
- l don't use oil, but you can saute veggies in about 2 tbs of oil shopping list
- You can also add okra to this also shopping list
How to make it
- Saute onion & bell pepper till soft
- Add chicken and cook for about 5 mins
- Add about half the jar of dry roux and stir in about 2 cups of the water.
- Stir until it is blended.
- Add remaining water and roux.
- Bring to a boil
- Add the rabbit and seasonings
- Cover and let simmer for about 2 hours
- Adjust your seasonings to taste.
- Serve over rice and enjoy!
