Coconut Fried Chicken 1

- 1 egg shopping list
- 1/2 cup buttermilk shopping list
- 1/2 cup beer shopping list
- 5 ounces cake flour shopping list
- 1/2 teaspoon baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- 1 1/2 teaspoons salt shopping list
- 2 pounds Boneless -- skinless chicken shopping list
- Breast shopping list
- 2 cups coconut shopping list
How to make it
- Combine eggs, milk and beer in a bowl. Mix cake flour, baking powder, baking soda and salt together and add to the milk mixture. Mix well.
- Batter should have consistency of thin pancake batter. Cut chicken into 1/2 inch pieced and dredge in all-purpose flour.
- Dip in buttermilk and then dip into batter. Roll in coconut. Deep fry at 350° oil until browned.
- Note: The above recipe has been entered exactly as written from Dianaskitchen.com. My recommendations are as follows: Consider doubling the buttermilk (may also use coconut milk) and beer, then divide. Soak the chicken in half the milk/beer marinade for a couple hours. Use the other half of the milk, beer and 1 egg to make batter as directed. I would also add salt and pepper to the batter.
