Gram Dumplings With Spinach Sauce

- For Phulki(Dumplings): shopping list
- 2 cups gram flour(Besan),sifted shopping list
- 1/4 tsp bicarbonate of soda shopping list
- 1 tsp salt shopping list
- 1 1/2 tsp red chilli powder shopping list
- 1 tsp cumin seeds shopping list
- 1 tsp caraway seeds(Ajwaiin) shopping list
- 2 tbsp whole coriander seeds shopping list
- 1 large onion,chopped shopping list
- 2 green chillies,finely chopped shopping list
- 2 tbspns curry powder shopping list
- 4 tbsp fresh coriander leaves,chopped shopping list
- water,as required shopping list
- For spinach Sauce: shopping list
- 1 tin Carnation Evaporated Soy milk shopping list
- 1 tsp salt shopping list
- 1/2 tsp red chili powder shopping list
- 250g frozen spinach shopping list
- Raita: shopping list
- cucumber, diced shopping list
- tomatoes, diced shopping list
- shredded coconut shopping list
- Cooked brown or white rice shopping list
- Pappadums to serve- 2 per person shopping list
How to make it
- Mix the ingredients in a bowl.
- Make a slight well in the centre,add water and beat well with a spoon or whisk(Add enough water a little at a time to make a batter the consistency of thick cream).
- Mix well to combine.
- Leave to rest for at least 15 minutes.
- Heat cast iron pan, and then turn down to low heat.
- Drop teaspoonful of batter in pan
- Dry fry to a golden color,turning once or twice.
- Remove and place them in a serving dish.
- For sauce:
- Heat a small saucepan.Add onion and dry fry till light golden.
- Add cumin seeds.
- Add soy milk, 1\2 cup water,salt and red chilli powder to make a smooth paste.
- Set aside
- Serving
- Serve rice, then add dumplings, then spoon suace over top.
- Put raita on table for serving.
- Serve with Chappati/pappadums
