Chicken Chile Stew

- 1 T olive oil shopping list
- 1 green bell pepper, chopped shopping list
- 1 med onion, diced shopping list
- 3 cloves garlic, minced shopping list
- 3 - 4 chicken breasts, cooked, boned & cubed shopping list
- 2 15 oz cans diced tomatoes shopping list
- 2 15 oz cans pinto beans shopping list
- 1 c picante sauce shopping list
- 1 T chili powder shopping list
- 2 t cumin shopping list
- 1 1/2 cups whole grain rice, cooked shopping list
- sharp cheddar cheese, grated shopping list
How to make it
- Saute green pepper, onion & garlic in olive oil.
- Add the chicken and other ingredients.
- Simmer 15 minutes until flavors have blended.
- Serve over rice. Top with grated cheese.
