How to make it

  • Put garlic & olive oil in microwave safe bowl. Heat until garlic is soft, about 90 seconds. Let sit.
  • Cook penne according to package directions. Drain and blanch in cold water.
  • Cut mozzarella balls in half.
  • In large bowl combine pasta, mozzarella, olives, tomatoes, and Italian parsley.
  • Stir vinegar & basil into garlic olive oil.
  • Pour over remaining ingredients and mix well to coat.
  • Refrigerate at least 2 hours.
