Penne Salad with Fresh Mozzarella

- 8 oz good quality penne pasta shopping list
- 6 oz fresh mozzarella balls, packed in water shopping list
- 2/3 cup pitted kalamata olives shopping list
- 1/2 9 oz package grape tomatoes shopping list
- 2 T fresh Italian flat leaved parsley shopping list
- 1/4 c extra virgin olive oil shopping list
- 2 cloves garlic, minced shopping list
- 1 T white balsamic vinegar shopping list
- 1/2 tsp dried basil shopping list
- sea salt to taste shopping list
How to make it
- Put garlic & olive oil in microwave safe bowl. Heat until garlic is soft, about 90 seconds. Let sit.
- Cook penne according to package directions. Drain and blanch in cold water.
- Cut mozzarella balls in half.
- In large bowl combine pasta, mozzarella, olives, tomatoes, and Italian parsley.
- Stir vinegar & basil into garlic olive oil.
- Pour over remaining ingredients and mix well to coat.
- Refrigerate at least 2 hours.
