Sauteed Pepper Onion and Mushrooms With Crispy Parmeasan Cheese

- parmesan cheese (buy a wedge not pre-grated) shopping list
- 1 Large white onion shopping list
- 1 Large red pepper shopping list
- 2 cups sliced mushrooms shopping list
- 1 tab butter shopping list
- dry red wine shopping list
- olive oil shopping list
- balsamic vinegar shopping list
- salt shopping list
- pepper (i used a combination of black, white and red pepercorns) shopping list
- Crispy italian or French bread shopping list
How to make it
- Parmesan Cheesh crisps
- Pre-heat over to 425 F
- Lightly spray a baking sheet with non-stick spray (i.e. PAM)
- Grate cheese into small piles and flatten on pan
- Make 6-8 piles on pan (keep at least an inch from others)
- Place in oven for 3-4 minutes or until golden brown and crispy
- Remove and let cool
- They will harden to thin wafer-like crisps
- Set aside
- Onion, Mushroom and Peppers
- Slice onion finely
- Slice pepper into strips
- Heat skillet
- Add olive oil and coat pan
- Once hot, add onion and mix to coat with oil
- After 2-3 minutes, add peppers and 1/2 mushrooms
- Mix
- Add remaining mushrooms
- Add salt and pepper as desired
- Mix periodically
- Cook until onions are clear
- Add dash of balsamic vinegar
- Add red wine to taste
- Add tab of butter
- Let butter melt
- Mix
- Serve with a slice of bread and place 2 parmesan crisps on top
