Italian Sausage and Spinach Soup

- 2-3 lbs. of sweet Italian sausage (removed from casings) shopping list
- 1/4 cup olive oil shopping list
- 4 slices of crispy bacon, crumbled shopping list
- 1 cup diced pepperoni shopping list
- 2 carrots, sliced then into quarters shopping list
- 4 cloves garlic minced shopping list
- 1 large onion chopped shopping list
- 1 red pepper chopped shopping list
- 1-1/3 cup pearl barley shopping list
- 2-3 tsp quick tapicoa shopping list
- 9-10 cups of chicken broth shopping list
- 1 large can (29 oz) hominy or equal of cannelini beans shopping list
- 1 (14.5 oz) diced Italian tomatoes with juice shopping list
- salt & pepper to taste shopping list
- 2 tbsp paprika shopping list
- 1 tbsp garlic powder shopping list
- 3 tbsp italian seasoning shopping list
- 1 tsp rosemary shopping list
- 1/8 cup parsley shopping list
- 1 tbsp sundried tomatoe paste shopping list
- 1 cup parmesan cheese shopping list
- 1 tsp crushed red pepper shopping list
- 2 pkgs of fresh spinach or 2 (10 oz) frozen & thawed spinach shopping list
How to make it
- In large dutch oven heat olive oil and add sausage, crumble well
- When no longer pink add vegetables and saute.
- Add bacon & pepperoni.
- Sprinkle tapioca over pot
- Add broth, barley, hominy (or beans), tomatoes. Bring to boil
- Lower to simmer and add balance of ingredients.
- Cover and simmer for atleast 75 minutes.
- Add spinach and cook till wilted in soup.
- If you like a thicker soup, take about 2 cups of broth out and mix with cornstarch or tapioca starch and add back to pot.
