Chorizo Quinoa And Vegetable Soup

- 2 chorizo sausages, casings removed shopping list
- 1-2 carrots, peeled and diced shopping list
- 2 celery stalks, diced shopping list
- 1 onion, diced shopping list
- 2 cloves garlic, minced shopping list
- chili powder (optional -- I like it spicy) shopping list
- 1 potato, peeled and diced shopping list
- 1 bay leaf shopping list
- 6 cups chicken stock shopping list
- half a cup of quinoa, rinsed through sieve until water runs clear shopping list
- pepper shopping list
- Curly parsley, chopped shopping list
How to make it
- Heat a little bit of olive oil in a dutch oven over medium heat. Add the first six ingredients. Saute for 8-10 minutes. Add stock, potato and bay leaf. Bring to boil, reduce heat and cook uncovered for 15 minutes. Add quinoa and parsley and cook for another 15 minutes. Season with salt and pepper.
