How to make it

  • Heat a little bit of olive oil in a dutch oven over medium heat. Add the first six ingredients. Saute for 8-10 minutes. Add stock, potato and bay leaf. Bring to boil, reduce heat and cook uncovered for 15 minutes. Add quinoa and parsley and cook for another 15 minutes. Season with salt and pepper.

    I really love chorizo. Here in Germany we get the Spanish version which is sort of like salami with a kick. Really great sounding recipe.
