How to make it
- Trim the sprouts and cut them into quarters. Bring a pan of water to the boil and blanch the sprouts for 2 minutes, then drain.
- Heat a frying pan and dry fry the cashews over a medium heat until lightly toasted. Set aside.
- Pour the oil into the pan, then stir-fry the ginger, honey and lemon juice for 1 minute. Add the sprouts and stir-fry until tender.
- Toss in the cashews and a little lemon zest to taste and serve at once.
