Cheesecake With Wild Berries And Balsamic Vinegar Coulis

- 1/4 cup melted butter shopping list
- 1 and 1/2 cups oatmeal cookies crumbs shopping list
- 1/4 sugar shopping list
- 3 large eggs shopping list
- 3/4 cup quark cheese or sour cream shopping list
- 2 tsp vanilla extract shopping list
- 16 oz full-fat cream cheese (room temperature) shopping list
- 9 inch springform pan shopping list
- 1 cup mixed berries (thawed if you use the frozen kind, I do!) shopping list
- 1 tbsp balsamic vinegar shopping list
- 1/2 tbsp whiskey shopping list
- 1/2 cup sugar shopping list
How to make it
- Combine crumbs, melted butter; press onto bottom of 9-inch springform pan.
- Combine cream cheese and sugar, mixing at medium speed on electric mixer until well blended.
- Add eggs, one at a time, beating well after each addition. Blend in quark cheese or sour cream and vanilla; pour over crust.
- Bake at 325 degrees for about 1 hour.
- To make the berries and balsamic vinegar coulis, put the berries and sugar in a pan over low heat until the sugar is melted, add vinegar and whiskey and let simmer for about 15 minutes. Puree the berries.
- Pour the coulis over the cheesecake after it has sat on the fridge for at least 2 hours.
- Enjoy!
