Pretty Pasta With Prosciuto and Snow Peas

- 1 lb bow tie pasta shopping list
- 6 Tbsp extra-virgin olive oil shopping list
- 1 large sweet white onion, thinly sliced shopping list
- 1 lb baby bella mushrooms,wiped and sliced shopping list
- 2 -3 Tbsp garlic, finely minced shopping list
- 1 lb snow peas shopping list
- fresh snow peas shopping list
- 1/4 lb high quality prosciutto, thinly sliced and cut in half lengthwise shopping list
- 1/4 lb Peccorino-Reggiano cheese, freshly grated shopping list
- kosher salt and freshly ground black pepper shopping list
How to make it
- Bring 4 quarts of salted water to a full boil and cook pasta until al dente. Drain and set aside.
- Meanwhile, heat 12 skillet and then add olive oil. On high heat add onions and cook until they begin to soften and obtain some color. Add mushrooms and continue to stir fry until mushrooms are tender . Add the garlic and snow peas and stir continuously for 45 seconds. Remove from heat and pour into a heated serving dish with the drained pasta. Add frozen peas, prosciutto, and half of the Parmigiano-Reggiano. Toss together until all ingredients are evenly distributed. Add kosher salt and freshly ground black pepper to taste. Garnish with remaining Parmigiano-Reggiano. Serve immediately or at room temperature
