Peas and Prosciutto

- 2 Tbsp. olive oil shopping list
- 2 shallots, chopped shopping list
- 2 garlic cloves, minced shopping list
- salt & freshly ground pepper shopping list
- 1 lb. bag frozen peas, thawed shopping list
- 4oz prosciutto, diced (it's like bacon, only it's not smoked) shopping list
- 1/4 Cup chopped fresh Italian parsley leaves shopping list
How to make it
- Heat oil in a heavy large skillet over medium-low heat.
- Add shallots, garlic, salt & pepper and saute until tender, about 1 minute.
- Add the peas and saute until heated through, about 5 minutes.
- Stir in the prosciutto and coof for 1 to 2 minutes.
- Add the parsley and remove from the heat.
- Season with salt & pepper, and serve.
