How to make it

  • Heat oil in a heavy large skillet over medium-low heat.
  • Add shallots, garlic, salt & pepper and saute until tender, about 1 minute.
  • Add the peas and saute until heated through, about 5 minutes.
  • Stir in the prosciutto and coof for 1 to 2 minutes.
  • Add the parsley and remove from the heat.
  • Season with salt & pepper, and serve.

    Yum, these sound great. I love peas, luckily the whole family does. Mom and I tried to grow english peas when we had gardening room (before pool) and they would alway fry in the Florida heat BUT when we could harvest a few fresh peas, they were awesome. This sounds delicious and something that must be made soon. Thanks.
