Easy Quick Pesto Pasta With Shrimp

- 1lb medium, raw, deveined, peeled shrimp with tails removed shopping list
- 2 bunches of fresh basil shopping list
- 1 bunch fresh arugula shopping list
- 2tbsp EVOO shopping list
- 2oz FF half and half shopping list
- 4 ripe roma tomatoes shopping list
- 2tbsp minced garlic shopping list
- 1oz pine nuts (opt) shopping list
- 1/2 box thin spaghetti shopping list
- salt and pepper to taste shopping list
How to make it
- Boil pasta al dente, according to box directions
- In a food processor/blender mix 1 1/2 bunches of basil, 1/2 of bunch of Arugula, EVOO, half and half, garlic, and 1/2 oz Pine nuts. (Pine nuts are opt, just give it a lil more flavor, and I use minimal EVOO to save on calories/fat, but if you like a moister pasta dish, add more!!)
- Stovetop, on medium heat add shrimp and pesto sauce, cook until shrimp is pink, turn to low heat
- Add pasta, chopped tomatoes, remaining basil, arugula, salt and pepper if desired, and pine nuts
- Stir well and VIOLA!! :) Was super simple and YUMMY!
