How to make it

  • Boil pasta al dente, according to box directions
  • In a food processor/blender mix 1 1/2 bunches of basil, 1/2 of bunch of Arugula, EVOO, half and half, garlic, and 1/2 oz Pine nuts. (Pine nuts are opt, just give it a lil more flavor, and I use minimal EVOO to save on calories/fat, but if you like a moister pasta dish, add more!!)
  • Stovetop, on medium heat add shrimp and pesto sauce, cook until shrimp is pink, turn to low heat
  • Add pasta, chopped tomatoes, remaining basil, arugula, salt and pepper if desired, and pine nuts
  • Stir well and VIOLA!! :) Was super simple and YUMMY!
