- 1 (12 oz) pkg sausage links shopping list
- 1 large green bell pepper, medium dice shopping list
- 1 medium banana pepper, medium dice shopping list
- 2 medium onions, medium dice shopping list
- 12 eggs, beaten shopping list
- salt to taste shopping list
- black pepper, to taste shopping list
- 1 cup shredded monterey jack cheese shopping list
- 8 (10-inch) flour tortillas shopping list
- hot sauce shopping list
How to make it
- Brown sausage links in large skillet; set aside to cool. When the links can be handled, cut into 1/2-inch slices.
- Add a bit of fat to the skillet, if needed, and lightly sauté diced peppers and onion.
- Add sausage back into pan. Add some salt and pepper to eggs, and then combine with mixture in skillet and cook over low heat, stirring occasionally, until done. Scoot the pan off the burner and cover.
- In the meantime, place tortilla shells in a covered dish in the microwave. Heat on defrost, 15 seconds at a time, until slightly warm.
- Now for the assembly...
- Visually divide the pan mixture into 8 parts. Spoon each part onto the middle upper 2/3's of a tortilla.
- Sprinkle a tablespoon of cheese atop the mixture. Add hot sauce, if desired.
- Fold up the bottom 1/3 of the tortilla, and then fold over each side to the middle.
- Serve with Spanish style rice.
