How to make it

  • Melt 1/2 stick butter in a large saucepan. Add celery, onion, bell pepper, and mushrooms, and cook until veggies are soft but not mushy.
  • Add wild rice and stir so that the kernals are coated in the butter; toast for a minute and then add the water or broth and bring to a boil. Cook for a 1/2 hour.
  • In a separate medium saucepan, toast the white rice in 1 Tbsp of butter, and then add to the wild rice/veggie mixture and cook for 15 minutes.
  • Remove from burner and stir in undiluted soup and bacon. If mixture is too dry, add a bit of heated milk or chicken broth.
  • Season to taste and serve.
