How to make it

  • Preheat oven at 350 then prepare rectangular baking pan with cooking spray and lightly flour.
  • In mixing bowl combine zucchini, sugar, applesauce, vanilla and coconut extract.
  • In another mixing bowl combine flour, salt, baking powder, baking soda and cocoa.
  • Mix wet ingredients with dry ingredients just until moistened.
  • Spread batter in prepared pan and bake 25 minutes.

    Baked this last evening. Made half recipe, but subbed Gran Marnier for the coconut extract. DH heard the ingredients, and he said no. But he asked for a "small piece" and Liked!
    My only whine: I used too much cocoa (Droste). I made an icing and drizzled it over and a sprinkling of cinnamon over all. It is very good! (and no fat, cholesterol, trans fats, etc etc) Next time I'll cook in a cupcake form and lower the cocoa. Thank you for posting!! I'll give it a 4 right now.
