How to make it

  • Heat sauce pan with olive oil, start boiling water at this time as well for pasta
  • Cut tomatoes into quarters and set aside
  • Roughly chop basil and set aside
  • Finely chop the onion and set aside
  • When oil is hot, add onion and mix
  • Add dried basil and oregano
  • Let onion cook until soft
  • Add tomatoes and mix until coated with oil
  • Add salt and pepper
  • Let cook down (keep partially covered) stirring occassionally
  • After about 15 minutes, add a portion of the butter and stir
  • Let cook another 15 minutes or so
  • Add a portion of the fresh basil and stir
  • Zest the lemon and set aside
  • Drain pasta and add to tomatoes in the sauce pan and stir
  • Add remaining butter, a few pinches of zest and basil
  • Let cook until butter melts - stir occassionally
  • Serve - add pinches of basil and lemon zest to each plate | bowl
