Pasta with tomatoes fresh basil and lemon zest

- 1 lb spaghetti or penne shopping list
- 15 - 18 Fresh roma tomatoes (cut into quarters - keep skins on) shopping list
- 1 bunch fresh basil (roughly chopped) shopping list
- 1 small white onion (finely chopped) shopping list
- 1 fresh lemon (you need the zest, not the juice) shopping list
- 1/2 stick butter cut into tabs shopping list
- olive oil shopping list
- salt shopping list
- black pepper shopping list
- dried basil (a pinch) shopping list
- Dried oregano (a pinch) shopping list
How to make it
- Heat sauce pan with olive oil, start boiling water at this time as well for pasta
- Cut tomatoes into quarters and set aside
- Roughly chop basil and set aside
- Finely chop the onion and set aside
- When oil is hot, add onion and mix
- Add dried basil and oregano
- Let onion cook until soft
- Add tomatoes and mix until coated with oil
- Add salt and pepper
- Let cook down (keep partially covered) stirring occassionally
- After about 15 minutes, add a portion of the butter and stir
- Let cook another 15 minutes or so
- Add a portion of the fresh basil and stir
- Zest the lemon and set aside
- Drain pasta and add to tomatoes in the sauce pan and stir
- Add remaining butter, a few pinches of zest and basil
- Let cook until butter melts - stir occassionally
- Serve - add pinches of basil and lemon zest to each plate | bowl
