Prosciutto Frizzled Fish

- For bread Crumbs: shopping list
- 2 oz. prosciutto,diced (1/2 c) shopping list
- 2 Tbs extra virgin olive oil shopping list
- 1 c fresh bread crumbs shopping list
- 1 Tbs chopped fresh parsley shopping list
- 1 tsp minced lemon zest shopping list
- salt and red pepper flakes to taste shopping list
- For the Fish: shopping list
- 4 white fish fillets,such as halibut,cod,tilapia seasoned with salt and pepper(4-6 oz ea.) shopping list
- 2 Tbs extra virgin olive oil shopping list
- 12 thin lemon slices shopping list
- Prepared bread crumbs shopping list
How to make it
- Preheat oven to 400 degrees. Saute prosciutto for the bread crumbs in 2 Tbs oil in saute pan over med-high heat until crisp,5 mins Drain on paper-towel-lined plate.
- Toast crumbs in the prociutto drippings in same pan over med-high heat till browned,2 mins. Combine with parsley,zest,prosciutto,salt and pepper flakes.;set aside.
- Sear fish in 2 Tbs oil in ovenproof skillet over med-high heat Carefully flip fillets over and transfer pan to the oven. Roast fish until fillets flake easily with fork,5-6 mins.
- To serve.mound some garlicky spinach on each plate and top with lemon slices and a fillet. Garnish with bread crumbs.
- Garlicky spinach;
- 2 Tbs chopped garlic
- 1 tsp red pepper flakes
- 1 Tbs extra virgin olive oil
- 1 bag fresh spinach (9oz0
- salt to taste
- Saute garlic and red pepper flakes in oil in large saute pan over med-hifgh heat until fragrant,30 secs. to 1 min. Add the spinach and toss with tongs to wilt,2 mins. Season with salt
