Texas Style Chili

- 2 lbs. chuck or sirloin roast, trimmed and cut into 1 in. chunks shopping list
- 1 red bell pepper, cut into 1 in. pieces shopping list
- 1 green bell pepper, cut into 1 in. pieces shopping list
- 1 lg. yellow onion, but into 1 in. wedges shopping list
- 1 lb. white mushrooms, quartered shopping list
- 2-3 cloves garlic, minced shopping list
- 1 (16 oz.) can whole tomatoes, roughly chopped shopping list
- 1 (16 oz.) can tomato sauce shopping list
- 4 C. chicken or beef stock shopping list
- 2 Tbs. chili powder shopping list
- 1 tsp. sweet paprika shopping list
- 1/4 tsp. cayenne pepper shopping list
- fresh ground black pepper to taste shopping list
How to make it
- Heat a 6 qt. pot over med.-high heat. Add cooking oil and half of the beef. Brown the beef in batches.
- Return the beef to the pot, and add all other ingredients. Stir well and bring to a boil.
- Cover and reduce heat to low. Cook for at least 1 hour, but up to 2 hours would be better.

Fantastic. There are 10,000 chili recipes and I've cooked maybe fifty of those then you come up with this very enticing number so I'll make it fifty one. This is a very nice 5. Salud un rato (cheers for a while)
