- 1/2 kg sooji or course semolina flour shopping list
- 1/2 kg dry roasted peeled chick peas shopping list
- 1/2 kg ghee or clarified butter shopping list
- 25gm green cardamom shopping list
- 125 gm almonds shopping list
- 125 gm pistachios shopping list
- 75 gm thin coconut flakes (do not use powder) shopping list
- 100 gm edible gum (gond kateera) shopping list
- 125 gm raisins shopping list
- 100 gm powdered sugar shopping list
- 200 gm regular sugar (or to taste) shopping list
- 100 gm puffed foxnut seeds (phool makhney) shopping list
- 1/2 tsp oil shopping list
How to make it
- 1. Melt ghee in a big pan and lightly brown sooji in ghee, Keep the flame on medium or low so as not to burn the sooji. It will take almost 30 minutes for it to roast. Keep stirring constantly.
- 2. Grind the dry roasted chick peas in a coffee grinder and sift through a sieve. Set aside.
- 3. While sooji is roasting soak edible gum in oil lightly and microwave in a microwave safe plate in small batches i.e. 25 gm each. Each batch will puff up in 2 minutes or less. Set aside.
- 4. Powder green cardamom and put in a big mixing pan.
- 5. Lightly crush puffed foxnut seeds, almonds and pistachios in the coffee grinder. Grind the puffed edible gum too.
- 6. Make sure the raisins are clean of any stems.
- 7. When the sooji is done, take the pan off the burner and mix in roasted ground chick pea flour immediately. Mix well.
- 8. Put everything in the big mixing pan with cardamom and mix well. Put sugar in the end to taste and enjoy this fragrant panjiri. Heavenly...
